Rum balls: Gluten free, no added sugar, no butter
These rum balls taste as good as the original version yet don’t contain the gluten, butter and added sugar that the original does. A bit of elbow grease is required in the rolling process however it is worth it. Make them ahead of time as they need around 60 minutes in the freezer to become solid.
Servings: Makes approximately 10 rum balls
Preparation time: 20 minutes
Freezing time: 60 minutes
Ingredients:
½ banana mashed
2 egg whites
1 small handful of dates
1 cup desiccated coconut
80g chocolate whey protein powder
2 tsp raw cocoa powder
1 tsp honey
3 tbs flaxseeds
Method:
• Mash ½ banana in a bowl and add two egg whites
• Grind flaxseeds and 3 large pinches of desiccated coconut in a blender
• Add dates to blender with whey protein and cocoa powder and blend until a powdery type consistency
• Add blended ingredients to bowl and stir well
• Cover a large plate with remaining coconut
• Using a teaspoon, scoop portions of mixture out of bowl then drop straight onto coconut
• Roll the ball around the plate until covered with coconut.
• Place rum ball on a separate plate
• Place all rum balls in the freezer for approx 60 minutes before serving
Optional extra. Orange rind can also be added to give a jaffa taste
