Choc banana muffins: Gluten free, no added sugar or butter
Choc banana muffins
These choc banana muffins are quick and straight forward to make. No flour, sugar or butter is required and the muffins are still moist when consumed.
Serves: Makes 8 muffins
Preparation time: 5 minutes
Cooking time: 20 minutes
Ingredients
2 bananas mashed
4 egg whites
5 pitted dates
2 tbs crushed flax seeds
2 tsp organic cocoa powder
3 good pinches of coconut blended
30g unflavoured or chocolate whey protein powder
2 tsp cinnamon
1 tsp baking powder
50g of dark chocolate (70% or better)
• Preheat oven to 180dg
• Mash bananas in a bowl and add egg whites
• Add all other dry ingredients and mix well
• Add ingredients to a muffin or cupcake tray
• Place a small piece of dark chocolate into the middle of each cup cake
• Place in oven for 20 minutes or until muffins are cooked through
• When cakes are removed from oven spread melted chocolate over top of cake
