    Carrot and Zucchini Slice: Gluten Free

    Overall, you average carrot and zucchini slice isn’t too bad for you. The main problem is the refined flour and gluten. This Carrot and zucchini slice is made with besan flour which is made from chick pea and contains no gluten.

    Serves: 6-8
    Preparation time: 5-10 minutes
    Cooking time: 45 minutes

    Ingredients:

    2 carrots
    2 zucchini
    2 tsp of curry powder
    5 eggs
    1 cup of besan flour
    1 tsp salt
    1 tsp of baking powder

    Method:

    Pre-heat oven to 180 dg
    Crack eggs and whisk
    Grate carrots and zucchini into bowl
    Add remaining ingredients and stir well
    Pour ingredients into a baking tray lines with aluminium and baking paper
    Bake in oven for 45 minutes
    Once baked, remove and allow to cool on a wire rack before slicing
