Raw Jaffa Chocolate Balls – Low carb, gluten free
Serves – 6
Preparation time – 15 minutes
Cooling time – 1-2 hours
Ingredients:
Measurements are estimate – you may need to adjust to suit
1/3 cup of coconut oil
1/3 cup of raw cocoa powder
1/3 cup of chia seeds
3 tbs of hard coconut milk
Zest of 1 orange
3 tsp of vanilla bean paste or essence
4 stevia tabs
1 tsp cinnamon
Method:
Melt coconut oil in microwave for approx. 1-2 mins and add to bowl
add raw cocoa powder, solid coconut milk, chia seeds, orange zest, vanilla bean, stevia and cinnamon.
Mix ingredients well then using a teaspoon, scoop out a small portion of mixture and roll into a ball with your hands. Place chocolate balls onto a large plate covered with baking paper.
Place in the fridge for 1-2 hours to harden.
Tips: As the cocoa powder is very bitter you may need to add extra stevia, cinnamon or vanilla bean/essence to suit your taste.
For the coconut milk, use the solid milk at the top of the can. Shake the can before opening, if it’s runny, store in the fridge and soon the top 2/3rds of the can will be solid milk.
